Rosalee’s Pizzeria is an old world East Coast style neighborhood pizzeria.
An “old world East Coast style” pizza, to us, is one that is modeled after some of the earliest pizzerias in the United States. Developed by early 20th century Italian immigrants to this country, the foundation is the crust, being that it was bread bakers that first introduced this new, magical food. The highest quality tomatoes and cheese round out this treasure. The pizzas, or pies as they are often referred to as, typically have a slight rustic char to both the bottom of the crust and the top of the pie.
“Neighborhood”. What’s that part all about? Well, that’s a place that’s welcoming and comfortable. Involved in and part of the community. A place where you see people you know, or maybe even see people you want to know. A place to celebrate your team’s victory, a place to take your date on Friday, and a place you run into for a quick lunch and run back to work.
Rosalee’s pizza isn’t gourmet and it isn’t engineered in a food laboratory. We shred and grate our cheeses by hands, make our sauce from high quality tomatoes, and grind our own pork sausage in house.
We decided to open Rosalee’s Pizzeria because we want to share with all of you, some of the things we value most-our love of good food, socializing with friends and family and being a part of our neighborhood – Longmont, and hang out with all of you in our backyard – Colorado.
